The Chinese are known for their impressive constructions, gunpowder strength and a dynasty system that gives you various unique benefits for a variety of strategies to work with.
Though it is a tough civilization to begin with, it also gives you extra villagers when you start. This gives you a upper hand over the opponent where you can build up formidable defenses and devise a quicker strategy.
The Dynasties come with their own benefits, but do not mean that you should be going for every one of them. Choose which bonus will suit you and switch over from a previous one to get the bonus effect.
