The only way you can evolve a Gimmighoul into a Gholdengo is by using 999 Gimmighoul Coins. This is the in-game currency that will require you to use it to evolve your Pokémon. Different Pokémon in the game require different conditions to evolve. So for Coin Chest Pokémon, you will need to have enough Coins to evolve a Gimmighoul to a Gholdengo.
In your adventure, you will also run into Wandering Form Gimmighoul. These Pokémon can only be interacted with to get you some Gimmighoul Coins, but cannot be caught for you to add to your Pokedex, or if you are thinking of evolving them further.
